Summer festivities come in many forms and this month, MHQ is celebrating alfresco dining!
According to National Public Radio (NPR), the word “picnic” has been around since the eighteenth century, and people have been eating outside for centuries. The term originally implied something akin to a potluck and picnics evolved from simple fare like bread and cheese to elaborate Victorian affairs.

I love picnics because it’s a great way to get together with family and friends at a favorite park or beach. Picnics are also an easy lunch option and fun adventure when traveling to a new city.
I like to keep it simple with picnics… sandwiches, deli pasta salads, fruit, and a treat of some sort – of course!

One of my favorite picnic recipes is Feel Good Foodie’s Mediterranean Couscous Salad. You just leave out the feta or substitute it for vegan feta to make an amazing, easy, portable vegan summer salad!
Mediterranean couscous salad is a light, healthy and simple salad that’s perfect for summer barbecues, potlucks and picnics. You can throw it together with either type of couscous and add popular Mediterranean add-ins like tomatoes, cucumbers, garbanzo beans and pine nuts. I love the idea of picnics but not the summer heat that goes along with picnics. But I love grilled vegetables and a good sourdough sandwich with grilled chicken, mozzarella, tomatoes, and pesto because it’s good hot or cold. I’ve been spending a lot of time with my nephew lately and one of his favorite songs is Canadian singer/songwriter Fred Penner’s song “Sandwiches” so I’ve had sandwiches on my mind a lot lately.
